By Vakho Babunashvili

In April 2016, Vakho Babunashvili, the author of this book visited the director of the Literature Museum of Georgia, Lasha Bakradze. "There is the oldest cookbook kept with us, and it might be interesting for you," said Lasha to Vakho. It turned out to be the cookbook (for the creation of the best dishes, sugar candy and drinks) of Prince Bagrat - the grandson of the Georgian King Erekle II and the son of the last King of Georgia, Giorgi XII. To the best of our knowledge, it is the first Georgian-language work on culinary art.

It was not our intention to imitate the recipes unconditionally, to keep the ancient language and the old units of measurement, because we believe that this book, just like the original, should be a practical one. Culinary art is first and foremost a living craft and only secondarily art, a creative process that is ultimately judged by physical pleasure.

In the recipes, which are 200 years old, they used products that were available 200 years ago. The sugar of that time and today's refined, white, pure product are two different things. Hence, all recipes in the book are adapted to modern reality. All products and ingredients are available in markets around the corner of your street.
