Qvevri is a wine vessel our ancestors used for the fermentation and maturation of wine. Usually buried under the ground, where the temperature is cooler, qvevri provided a longer maceration period for grapes on fermenting must. This ancient form of temperature control gives the wine an increase in aroma and flavor.  

Skin contact, which is another practice of winemaking in Georgia dating back to thousands of years, deepens and adds complexity to the flavor. According to this practice, the grape skins are not removed, as in typical white wine production, and are kept in contact with the juice for days or even months depending on the region.  The unique color, texture, and flavor of Georgian white wine also called amber is the result of skin contact.
